Food & Beverage: Sous Chef
The Sous Chef is responsible for the proper preparation of the planned menu in the absence of the Executive Chef and assists in the supervision of all kitchen employees. Clarifies and organizes all evening paperwork and posts next day’s production schedule. Assists the kitchen staff in all aspects of daily assignments, as required. Informs the Executive Chef of all activities and operational problems, making suggestions for improvement and corrections as needed. Assists in daily shift change walk-throughs of kitchen staff. Ensures that each plate leaving the kitchen meets high presentation standards, is a quality product and is properly portioned. Maintains appearance, cleanliness and service of facility at or above Health Department standards through routine, daily cleaning procedures. Assists in creating, planning, costing and executing menus, theme buffets, specials and holiday menus. Assists with food orders, production sheets and related material. Assists the chef in executing all catered and special functions.
Two to three years experience in a hotel, restaurant, or club with fine dining preferred. Culinary education and supervisory background desirable. ServSafe Certification is required. Ability to plan and organize work, to interpret instructions, recipes, specifications and standards. Knowledge of kitchen equipment operations and maintenance. Some knowledge of nutrition and diet. Health Care experience desirable.
Food & Beverage: Line Cook
Responsible for the preparation of all food items as per standardized recipes and special diet orders. Determines amount and type of food and supplies required for daily menus and seeing that supplies are obtained from storage areas in adequate time for meal production. A minimum of three years experience as a cook in a hotel, restaurant, club or similar institution. Ability to plan and organize work, to interpret instructions, recipes, specifications and standards. Knowledge of kitchen equipment operations and maintenance. Some knowledge of nutrition and diet. Ability to lift 50 pounds. May be exposed to extreme temperatures (freezers and stoves-range burners) for short periods of time. May be exposed to industrial cleaning chemicals.
Environmental Services: Janitor
Performs custodial work in apartments, hallways and common areas of our residential living areas and also in our skilled health care center. Sweeps, vacuums, mops, scrubs, waxes and polishes floors using industrial vacuum cleaners and scrubbing and buffing machines. Sometimes using ladders, dusts and washes walls, cleans ceilings and dusts and polishes light fixtures. Moves cabinets, boxes, furniture, crates and equipment to clean areas. Ability to understand and follow instruction in English and communicate effectively. Must have professional floor care experience. Ability to lift 80 pounds.
